Entertaining Family’s Sweet Pea Party Dip

On a recent trip to Maine, I made a stop at Sur-lie, a celebrated new restaurant in downtown Portland. The tapas menu offered many tasty dishes, but my favorite by far was the very simple, very delicious sweet pea hummus. When I returned home, I was still craving this silky, sweet and savory treat, so I set out to recreate the flavors in my kitchen. After a couple of attempts, I ended up with a result that I’m very proud to share with you. It is not as refined and elegant as the dish from Sur-lie, but, it’s darn tasty! When the bowl was empty, my family requested more. That’s always a good sign.

In a blender add the following ingredients and blend until smooth:

2/3 cup of cooked sweet peas

1/3 cup of fresh mint

1/2 of a garlic clove

1 tablespoon of olive oil

1/3 cup of water

crushed red pepper – to taste

salt – to taste

Pour the dip into a bowl or onto a serving plate and sprinkle with pea tendrils, and a drizzle of lemon juice and olive oil. It is great with pita chips!
