A Game Day Dish that is Hearty and…Vegan

I live in Wisconsin…and once fall arrives, we take our football pretty seriously! I love watching the Green Bay Packers and my beloved Wisconsin Badgers, and it is fun to turn football into social event. When hosting friends on game day, I go for simple, hearty meals. Here is a recipe for one of my favorites…a super easy, super tasty vegan soup! Even the meat eaters will enjoy this one.


Game Day Vegan Soup: Serves 4


24 oz of Fire Roasted Crushed Tomatoes

3 cups of Water

Olive oil

1 cup of diced carrots

1 cup of diced onions

1/2 cup of diced parsnips

1 cup of diced sweet potatoes

1 teaspoon garlic powder

1 teaspoon chili powder

punch of ginger powder

1 1/2 cups of canned garbanzo beans, rinsed

1 1/2 cups of canned navy beans, rinsed


4 Field Roast Smoked Apple Sage Sausages (vegan) sliced into rounds


In a large soup pot, heat 1 cup of oil. Add onion, carrot, parsnip, sweet potatoes, garlic powder, chili powder, ginger, and salt, and cook until the vegetables begin to sweat and release their aroma (yummm…). Then add 24 oz. of fire roasted tomatoes, 3 cups of water, garbanzo beans, navy beans, and stir. Cook over low heat for 30 minutes (or until the root vegetables are very tender).

When the soup is done cooking, heat a tablespoon of olive oil in a frying pan and let the sliced vegan sausages sizzle. Cook until they brown on both sides. As a final step, add the sausages to the hot soup and stir. Serve hot. Super easy! Really Tasty.

Garnish with your favorite toppings: avocado, onion, jalapeno, cilantro, or cheese for the non-vegans. This soup pairs well with an IPA or flavorful red wine (we served it with Melville Pinot Noir).
